Today I made something that is completely my own for the first time. It was fun to make and is really simple. I would use it as something to cool and cleanse the palate in between courses or as something to cool you down on a hot summer day like this one!
here it is: The Pink Lady
preparation time: 10 min serves: 5-6 depending on glass size
Ingredients
Two cups of finely chopped strawberries
2/3 cup of sugar
1 cup of water
1 cup of sugar (yes I am aware that I have sugar listed here twice! I promise it will make sense in the end :) )
about 2 quarts of water
3 large lemons
2 packages of raspberry tea
several trays of ice
Tools Needed
One medium sauce pan
Wooden spoon
a blender
a large pitcher
a tea kettle or coffee pot
several chilled glasses
and a hand held sifter
Instructions
In the medium sauce pan boil on high for about three minuets (or until the strawberries gain a syrupy consistency) the 2/3 cup of sugar, strawberries, and the 1 cup of water
stir with wooded spoon occasionally
once the desired consistency is achieved turn heat off and let the syrup cool slightly
squeeze all the lemons into a hand sifter held over the pitcher to catch all the pulp and seeds
add the syrup and about 2 quarts of water to the pitcher
stir well
pour about half of the juice into the blender and add several ice cubes
puree until it is a slushy consistency (like an icee from 7 eleven! Yummy!)
take your chilled glasses and slightly dip the rim into the leftover juice mixture only go down about a half centimeter then dip the now wet rim into the 1 cup of sugar so that the rim is covered
spoon slushy mixture into glasses and pour some of the remaining juice into the glass till it is just under the rim of sugar
garnish with mint leaves or any left over strawberries and serve!
If the drink is too sour for you add a little sugar on top when you serve it and mix it in as you drink. This is really tasty if I do say so myself!
I hope you enjoy this recipe!
By the way I will put a picture up as soon as I figure out how to transfer pictures from my camera to my blog.
Don't forget to cook with a smile!!!
